Cutting beef bones lengthwise

I learned well-nigh this method here (i believe information technology was Chef Jimmy): cutting marrow bones lengthwise. Can this exist done with a manus meat saw? Will it shred the marrow?

Freeze them outset and cut them with a VERY abrupt saw bract.  Nosotros did some similar that a few years ago to roast and serve the basic to consume the marrow with bread.

We did it on a bandsaw, but a expert operator with a paw saw should be ok.

Proficient idea, but a discussion of caution, a lot of those saws exhaust the air from the forepart to remove "sawdust" from the cutting path, that exhaust will have oil remainder in information technology almost of the time.

If it is a side or rear exhaust, that would piece of work great.

Good point.....   flush with edible mineral oil...  really well..... then oil with mineral oil....

I don't call up i am what you telephone call a "good operator" but i will give it a try. Freezing before cutting makes sense.

I don't think i am what y'all phone call a "practiced operator" simply i will give information technology a endeavor. Freezing earlier cutting makes sense.
If yous have a Workmate bench, or a vise, you tin can cut half fashion and and then flip around to finish.  I'd put forest between the vise jaws if you get that road.

Just have your time. The saw cuts straight unless you twist the handle rushing. Roasted Marrow? Definitely in the top 5 favorite foods...JJ

I exercise it all the time:

1. Freeze first

2. wrap in plastic.

three. cut on a table saw with a carbide tipped blade.

Takes about v seconds.

Aye...I don't own a table saw. Similar i said in the OP...hand meat saw.
